Being a radish sprout vegetables grower, we are challenged to produce domestic chicory root as new business. Through diversifying the uses of this unusual potato, like brewing chicory spirit (shochu), or producing chicory coffee or tea, we are aiming to improve food self-sufficiency ratio.
